State of Emergency







Snow in Georgia! AGAIN! I can't even believe the horrible winter 
we are having.  Last night around 8 it started with hail then snow and then it started sleeting over the snow.  Needless to say, without even one flurry in the sky the entire city of Atlanta went into sheer panic.  Saturday afternoon grocery stores sold out of every loaf of bread, gallon of milk, and pack of water they had. I saw people with grocery carts over flowing and some even had two carts!  I am still not sure what they thought would happen but, to each his own.  By noon on Sunday schools were closing.  I may have behaved like some of those school kids when I found out my office would be closing.  This morning I rose and made breakfast for the hubby.  I made Apple Muffins; normally I make them with banana's but we didn't have any.  My mom found the recipe here at All Recipes.  Try it out! 


Crumb Muffins





  • Ingredients

    1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3 bananas apples, mashed
  • 3/4 cup white sugar
  • 1 egg, lightly beaten
  • 1/3 cup butter, melted
  • 1/3 cup packed brown sugar
  • 2 tablespoons all-purpose flour
  • 1/8 teaspoon ground cinnamon
  • 1 tablespoon butter

Directions

  1. Preheat oven to 375 degrees F (190 degrees C). Lightly grease 10 muffin cups, or line with muffin papers.
  2. In a large bowl, mix together 1 1/2 cups flour, baking soda, baking powder and salt. In another bowl, beat together bananas apple, sugar, egg and melted butter. Stir the banana apple mixture into the flour mixture just until moistened. Spoon batter into prepared muffin cups.
  3. In a small bowl, mix together brown sugar, 2 tablespoons flour and cinnamon. Cut in 1 tablespoon butter until mixture resembles coarse cornmeal. Sprinkle topping over muffins.
  4. Bake in preheated oven for 18 to 20 minutes, until a toothpick inserted into center of a muffin comes out clean.



Is any southern breakfast complete without grits?  Yep, we didn't think so either!

  6. that snow reminds me of all the terrible weather we had last year in Richmond...those muffins look delicious though!! I must say I don't think I could have pulled it off from scratch like that!
